To make a long story short, you'll need to install the full Development Kit (not just the Runtime Environment) of one of the available Java 7 implementations.  At the moment, Nuxeo supports fully the Oracle Java 7 SDK.  In addition to Oracle's Java, it's also possible to run Nuxeo's products on the latest version of OpenJDK as well, if that's available for your platform.
